We are proud to present our 2025 Spring "Li Shan" Oolong, a Medium Roasted, A+++++ Grade high-mountain tea that sets a new benchmark for excellence from this prestigious region. Cultivated in the breathtaking Li Shan (Pear Mountain) area of Taiwan, celebrated for its extreme altitudes and unique alpine climate, this tea embodies the concentrated essence of one of the world's premier high-mountain terroirs. The challenging growing conditions of Li Shan, including cool temperatures, consistent mist, and dramatic day-night temperature variations, compel the tea plants to develop complex aromatic compounds and a deep, lingering sweetness.   

 

Origin and Terroir: Li Shan is situated within Taiwan's central mountain range and is synonymous with top-tier high-mountain oolong. Tea gardens here thrive at some of the highest elevations, often above 2,000 meters. This rarefied environment, coupled with fertile soil and careful cultivation, produces tea leaves that are exceptionally tender and rich, laying the foundation for an oolong with remarkable clarity, depth, and a distinctive "high-mountain charm."   

 

Appearance: The dry leaves of this Li Shan Oolong are masterfully crafted into tightly rolled, substantial spheres. Their "tight and strong" form speaks to careful processing, and the medium roast imbues them with a sophisticated palette of greens and warmer brown tones, hinting at the rich flavors within. A subtle, underlying "fruity fragrance" is discernible, a whisper of its high-mountain origin subtly transformed by the roasting process.   

Aroma: Upon infusion, the aroma is immediately captivating. The inherent clean, sweet fragrance of Li Shan is beautifully enhanced by the medium roast, introducing warmer notes that might evoke baked fruit, subtle caramel, or roasted nuts. This creates a complex and inviting bouquet that is both vibrant and comforting.

Liquor: The brewed tea presents a clear and brilliantly bright liquor. The medium roast lends it a beautiful hue, typically ranging from a rich golden yellow to a luminous amber. Its clarity and sheen are indicative of a high-quality tea with well-executed processing.

Taste: The taste is a truly refined experience, balancing the pristine qualities of high-mountain tea with the added depth of a skilled medium roast. The "refreshing tea flavor" is immediately apparent, layered with natural "sweetness," a luxurious "mellowness," and a satisfying "thickness" that provides a smooth, full-bodied sensation on the palate. The roast contributes warmth and complexity without overpowering the delicate high-mountain character.

Aftertaste: The finish is exceptionally long and profound. The "lingering aftertaste" is marked by a remarkable good "Hui Gan" (returning sweetness) that coats the mouth and persists beautifully. This is coupled with a noticeable "saliva producing" effect, leaving a feeling of freshness and invigoration that encourages contemplation and further sipping.

Brewing Recommendation: To unlock the full potential of this A+++++ Grade Medium Roasted Li Shan Oolong, we recommend using water heated to approximately 92-98°C (198-208°F). Use a generous leaf-to-water ratio, typically 5-7 grams per 100-150ml of brewing vessel. After a brief rinse (discard and do not consume), perform short, rapid infusions starting at 15-25 seconds, gradually increasing the steeping time for successive brews. This premium tea is designed for multiple infusions, with each steep revealing nuanced layers of its complex profile.   

 

Storage Recommendation: To preserve the exceptional quality and rich aroma of this medium-roasted high-mountain oolong, store it in a completely airtight container, ideally in the refrigerator. Protection from light, moisture, oxygen, and foreign odors is crucial to maintain its peak flavor and freshness over time.
