Introducing our 2025 Spring Shan Lin Xi Oolong, a Medium Roasted, A++++ Grade high-mountain tea that stands as a new benchmark for quality from this esteemed region. Cultivated in the breathtaking Shan Lin Xi (literally "Fir Forest Stream") area of Taiwan, renowned for its high altitudes, misty valleys, and pristine forests, this tea embodies the unique characteristics imparted by its exceptional terroir. The cool, damp environment and fertile soil contribute to tea leaves that develop a rich complexity and a distinctive "high-mountain character" deeply appreciated by tea enthusiasts.   

 

Origin and Terroir: Shan Lin Xi is nestled within Taiwan's central mountain range, with tea gardens typically situated at elevations ranging from 1,000 to over 2,000 meters. This high-altitude environment, coupled with consistent cloud cover and significant day-night temperature differences, is ideal for cultivating premium oolong. The slow growth results in tea leaves rich in aromatic compounds and minerals, laying the foundation for a tea with remarkable depth and persistence.   

 

Appearance: The dry leaves of this Shan Lin Xi are expertly crafted into tightly rolled, semi-spherical pellets. They possess a substantial feel and a visually appealing structure, characteristic of high-quality Taiwanese oolong. The medium roast imparts a slightly darker hue compared to greener styles, displaying rich greens often tinged with warmer brown tones.

Aroma: The aroma of the dry leaf is inviting, carrying a hint of the underlying high-mountain freshness. Upon brewing, the medium roast truly transforms the aromatic profile, layering notes of warm baked goods, perhaps a subtle nuttiness or caramelized sweetness, over the clean, sometimes subtly floral or vegetal base of the Shan Lin Xi leaf. This creates a complex and comforting fragrance.

Liquor: The brewed tea yields a clear and bright liquor. The medium roast contributes to a beautiful color, typically ranging from a radiant golden yellow to a richer amber hue, showcasing its depth while maintaining excellent clarity.

Taste: The taste is a harmonious fusion of high-mountain purity and roasted complexity. It offers a refreshing entry, followed by a smooth, mellow, and thick body that coats the palate. The inherent sweetness of the Shan Lin Xi leaf is present, beautifully complemented by the warming, often slightly toasty or nutty nuances brought forth by the medium roast. This creates a balanced and deeply satisfying flavor profile with considerable depth.

Aftertaste: The finish is enduring and layered. A pleasant and clear "Hui Gan" (returning sweetness) is a prominent feature, leaving a lasting sweet impression that unfolds gracefully. This is accompanied by a noticeable saliva-producing effect, enhancing the overall refreshing and comforting experience that lingers long after the tea is savored.

Brewing Recommendation: To best experience the intricate balance of this Medium Roasted Shan Lin Xi, we recommend using water heated to approximately 92-98°C (198-208°F). Use about 5-7 grams of tea leaves per 100-150ml of brewing vessel capacity. After a quick rinse (discarding the water), begin with infusions of 15-25 seconds, adjusting subsequent steep times based on desired strength. This tea is crafted for multiple infusions, with each round revealing evolving layers of its complex character.

Storage Recommendation: To preserve the rich aroma and flavor profile of this medium-roasted oolong, store it in an airtight container away from light, moisture, and strong odors. For optimal freshness, especially in warmer climates, refrigeration is recommended. Ensure the container is well-sealed before storing.
