Introducing our 2025 Spring "A Li Shan" Oolong, a Medium Roasted, A+++ Grade high-mountain tea that establishes a new benchmark for quality from this beloved region. Cultivated in the picturesque A Li Shan (Alishan) mountain range in Taiwan, a region celebrated for its stunning landscapes and ideal tea-growing environment, this tea embodies the classic characteristics of high-mountain oolong refined by a skilled medium roast. The moderate altitudes, fertile soil, and frequent mist in Alishan contribute to tea leaves that develop a naturally sweet and aromatic profile.   

Origin and Terroir: The Alishan region is one of Taiwan's most well-known high-mountain tea producing areas, situated at elevations typically ranging from 1,000 to 1,500 meters. The cool, consistent climate and abundant rainfall create conditions where tea plants thrive, yielding leaves that are tender, flavorful, and possess a desirable level of pectin, contributing to a smooth liquor. This 2025 Spring harvest captures the fresh vitality of the season from this prime location.   

Appearance: The dry leaves of this Alishan Oolong are carefully rolled into compact, semi-spherical pellets. Their uniform shape and density are indicative of quality processing. The medium roast has imparted a beautiful visual character, with the leaves displaying harmonious shades of deep green and warmer brown tones.   

Aroma: Upon infusion, the aroma is inviting and complex. The inherent fresh, sometimes subtly floral or sweet fragrance of Alishan oolong is beautifully layered with the comforting notes brought forth by the medium roast. Expect a warm bouquet that may suggest baked goods, a gentle nuttiness, or a hint of caramelized sweetness, creating a rich and appealing fragrance.

Liquor: The brewed tea presents a clear and bright liquor. The medium roast influences the color, resulting in a lovely hue that typically ranges from a clear golden-yellow to a radiant amber, showcasing the tea's depth while maintaining excellent clarity.

Taste: The taste is a delightful balance of high-mountain freshness and roasted complexity. It offers a clean and refreshing entry, followed by a smooth and mellow body. The natural sweetness characteristic of Alishan is present, complemented by the warming nuances from the medium roast, which can introduce notes of baked fruit or a gentle toastiness. The tea provides a comfortable thickness on the palate, leading to a satisfying and well-rounded flavor experience.

Aftertaste: The finish is clean and pleasant, with a noticeable lingering quality. A returning sweetness (Huigan) gracefully emerges on the palate, leaving a sweet and satisfying impression. This is often accompanied by a refreshing sensation that contributes to the overall enjoyment after the tea is consumed.

Brewing Recommendation: To fully appreciate the balanced profile of this Medium Roasted Alishan Oolong, we recommend using water heated to approximately 90-95°C (194-203°F). Use a ratio of about 5-7 grams of tea leaves per 100-150ml of water. After a brief rinse (discard), steep for short durations, starting around 15-25 seconds, and increasing the time for subsequent infusions. This tea is suitable for multiple infusions, allowing you to explore the evolution of its flavors.
