The Gaiwan, or "San Gai Wan," meaning "three-cover bowl," consists of three parts: the Lid, Body, and Saucer. Each component plays a vital role in the steeping process, allowing the tea drinker to savor the full sensory experience of Gongfu tea brewing.

Here's how to use this Gaiwan:

  1. Add 4-8 grams of tea leaves to the body of the Gaiwan. The amount can be adjusted depending on the desired strength of the tea and the type of leaves used.
  2. Pour boiling water over the leaves to steep. For green or black teas, water at 85-92 degrees Celsius is recommended to prevent burning the leaves and releasing bitterness.
  3. Place the lid on and then pour out the water, using the lid to hold back the leaves. This first rinse cleanses and primes the leaves for brewing.
  4. Continue the steeping process, pouring water over the leaves and then decanting. With each infusion, you may wish to extend the steeping time slightly to extract a deeper flavor profile, tailored to your personal preference.
