Our Tai Ping Hou Kui is called "early spring tea" because it represents the first flush of the year. Although the harvest date is chronologically late (late April), it is biologically the plant's first output after winter dormancy. Its unique high-altitude environment and large-leaf cultivar mean its "biological spring" begins later than other green teas.

Brewing Guide

Water: High-quality mineral or filtered water.

Temperature: 85–90°C (185–194°F). Avoid using boiling water to prevent scalding the tender leaves.

The Tall Glass Method:

Place ~5g of leaves into a pre-warmed tall glass.

Gently pour water along the inner wall until it reaches 2 cm in height.

Allow the leaves to partially absorb the water and begin to unfold.

Fill to 80% capacity. Watch the elegant "sword" leaves dance vertically in the liquor.
