Due to the pectin in the tea leaves, these chunks form under pressure and high temperature within the large piles. Initially, these chunks were considered unusable. Over time, people discovered they had a unique and attractive flavor, being sweeter and mellower than general shou cha. These chunks are now processed and utilized, and named "Lao Cha Tou."
