Distinctive Characteristics:

• An Ji Bai Cha derives its name from the white color of the young tea buds.
• The leaves are predominantly straight with a slight flatness, adorned with silver-white hairs and golden, sharp tips.
• This tea is noted for its intense and enduring fragrance.
• It is characterized by a noticeable Huigan (returning sweetness) and the ability to stimulate saliva production.
• The refreshing taste is superior to other green teas, attributed to its high amino acid content (18 types, with a concentration of 5-10.6%, about four times greater than in standard green teas).
• The tea’s distinctiveness is further enhanced by the tea tree’s temperature sensitivity, allowing for a production window of nearly one month.

Brewing Water Recommendations:

• Use mineral or filtered tap water.
• The ideal brewing temperature is approximately 90°C, but should not fall below 85°C. (Overly hot, boiling water is discouraged.)
