"Lao Cha Tou" (Old Tea Head) is a side producing comes from manufal fermentation (Wo Dui) since of pectin from tea leaf works along with pressure and high temperature inside the large pile. In the past, these chunks can't be teared off anymore wouldn't be used in product. A long period later, people occasionally found these were drinkable with unique and attractive tea flavor (like higher sweetness and mellowness than general shou cha) . Then these chunks are processed for utilizing and named as "Lao Cha Tou". (Originally, "Tou" can be used to described chunk in Chinese language. And also "Cha Tou" (Tea Head) can be used to name these people responsible for making tea. )
