Brewing Guide

• Water: High-quality mineral or filtered water.

• Temperature: 85–90°C (185–194°F). Avoid using boiling water to prevent scalding the tender leaves.

• The Tall Glass Method:

  1. Place ~5g of leaves into a pre-warmed tall glass.

  2. Gently pour water along the inner wall until it reaches 2 cm in height.

  3. Allow the leaves to partially absorb the water and begin to unfold.

  4. Fill to 80% capacity. Watch the elegant "sword" leaves dance vertically in the liquor.
